Mei Makes started the way most good kitchens do, with someone who could not stop cooking for the people around her.

Cooking has never been a side job

Mei has been cooking since she was small, learning at home from family, the way these recipes have always been passed along. It was never a hobby she picked up. It is simply what she does.

For the past decade she has cooked professionally in a school kitchen, putting out hundreds of meals a day on a schedule that does not bend. That work teaches things a home kitchen never will: how to hold a standard when the volume is high, how to keep every plate consistent, and how to run a kitchen that is spotless from open to close.

She holds the certifications Washington requires for safe food preparation and handling, and she keeps them current. Food safety is not paperwork to her. It is the reason she can hand a bag across the counter and know exactly what is in it.

Ask Mei why she cooks and the answer does not change. Food makes people happy. It puts them at one table when nothing else would. A hard week, a bad day, a house full of family who have not seen each other in a year, all of it gets easier over a good meal.

That belief is the whole reason this kitchen exists. Every order that leaves here is meant to do that job for somebody.

Why Spokane

Proper Chinese food, close to home

Spokane is a good food town, but proper Chinese cooking has been hard to come by here. Plenty of places serve something close to it. Fewer serve the real thing, made the way it is made at home, by someone who learned it from her family rather than from a supplier catalog.

That gap is what Mei is filling. Every order is cooked the day you asked for it, the sauces are built from scratch, and nothing goes out that she would not put in front of her own family.

She is proud to be cooking for this area, and she would like to feed you.
